FCS 3340: Human Nutrition
Prerequisites: Any two of the following: CHM 1211, CHM 1310, CHM 1330, CHM 1360, BIO 2129, or 2130. Presents the structure, function, metabolism and principal food sources of the major nutrients required by humans; discusses the role of an adequate diet in normal human body function and disease prevention. Students use nutrient and energy requirements as well as diet planning principles to evaluate their own diet. Contemporary food issues and controversies are also critically discussed. This section of the course is taught online with weekly in-class review sessions with the instructor.
